The Stone Mill option for the 60kg Tempering machine has been designed with the intention of helping you advance in your “nib to bar” concept.
The machine can prepare a composition of up to 30 kg of roasted cocoa beans, cocoa butter and sugar (and whatever other products you want to add) into your own delicious creation.
This patented mill system is equipped with 2 marble stones that are mechanically pressed onto a marble base plate.
After 8, 16 or 24 hours of conching, your chocolate is ready to temper.
Unseen is the option to remove the stones individually and manually from the machine and that the marble base plate rises automatically in the opposite direction of rotation of the mixing arm.
Your exclusive and personal “nib to bar” chocolate can be removed after removing the Stone Mill option can be immediately tempered in the same CW60 machine,
