The difference between Ice Cream, Sorbet & Gelato

Firstly it's important to understand the difference between the frozen desert you want to produce, at times it might look or feel like the same product but understanding the ingredients needed for each helps you understand why they all have different names and preferences to those consuming it.

Ice Cream
Ice cream is a frozen dessert made from a custard made of milk, cream, sweetener, and often egg yolks.

Sorbet

Sorbet is a frozen dessert made up of just fruit purée (or fruit juice, like lemon juice) and sweetener (commonly sugar, simple syrup, or liqueur). While ice cream, gelato, and sherbet are dairy products, sorbet is dairy-free and therefore vegan. Sorbet was originally used as a palate cleanser between courses of large meals, and its first use as a dessert came about in French cafes in the seventeenth century.      

Gelato 

Gelato is a frozen dessert made from a mixture of milk, cream, and sweetener. It originated in Italy and is widely sold in Italian shops called “gelaterias” around the country. This can be achieved by using the Gelato Chef Series of ice cream machines.


Making homemade ice cream with a ice cream maker

The process of creating your own ice cream has been simplified with the new advances of technology if the ice cream machines, it generally takes about 15-45 minutes to churn ice cream (the bowl needs to be frozen to make this process quicker) and thickens as time goes by with this quality ice cream, sorbet or gelato will be produced depending on the ingredients you have used.

Four steps in making ice cream

  1. Mix up your recipe and ensure the mix is chilled before pouring into the machine

  2. Take the pre-frozen bowl out of the freezer and put it on the machine. Cover it with the plastic guard. Turn it on

  3. Make sure you properly pour the mix into the bowl as it's churning

  4. Depending on the recipe and type of desert you are making, check your machine after every 15mins to ensure it is firm. If not you made add extra just to ensure it is well prepared                                                                                                                                                                                                                                                                                                                                                                                                               
    The ice cream is done when it’s firm and set. It can take up to 40 minutes for some recipes. It also varies based on how cold the ingredients were when you added them
